Ingredients

6# Extra Light Dry Extract

1# Golden Promise Pale Malt (toasted 40 min 250-300 deg)

.75# Crystal Malt 40L

.06# Caraaroma (130L)

1 oz Nugget Hops (11%) @ 60-min

1 oz Cascade Hops (5.5%) @ 20-min

.5 oz Centennial Hops (10.0%) @ 8-min

.5 oz Amarillo Hops (8.5%) @ 8-min

.5 oz Centennial Hops (10.0%) @ 0-min

.5 oz Amarillo Hops (8.5%) @ 0-min

1 pkgs Nottingham Yeast

Procedure

Heat 6.5 gal water to 154-F and soak all grains in a grain bag for 40-mins.  Remove grain bag, and bring water to a boil.  Add hops as indicated.  @ 30 mins left in boil, add DME and stir well.

@ flame out, add final hops and cool down to pitching temps.  Transfer to fermenter and pitch rehydrated yeast.  Ferment @ 67-F for 2 weeks.  Bottle or Keg as usual, targeting 2.4 volumes of CO2.

Drinkable as soon as carbed.  Takes 4-6 weeks in keg/bottle to really show its stuff.
